Bruschetta
Ingredients
1 baguette
2 garlic cloves, cut in half
50ml of extra virgin olive oil
300g of tomatoes, ripe
salt
1 handful of basil
How to Make
1.Preheat a grill to high
2.Slice the baguette at an angle to a thickness of 2cm
3.Toast the bread on both sides until golden brown
4.Rub the slices with the cut side of the garlic cloves, then drizzle liberally with olive oil
5.Chop the tomatoes into small pieces, shred the basil and mix together, seasoning
Variations
Try adding different herbs to your bruschetta such as thyme, oregano or chives. You could also add a spoonful of chopped shallot or red onion to the tomato mixture for an extra layer of flavour.
You could melt cheese on the bread when grilling for a more substantial morsel – cheddar and Parmesan both work really well. For a meaty option, add slices of cured meat such as Parma ham or salami.
Serving suggestions
